Like a toque-wearing Moses, Andre Rochat parted the waves of Vegas price range buffets in 1980, bringing the cuisine of his local France to a culinary desert. Rochat offers since added Andre's at the Monte Carlo and Alizé at the Palms. However his provincially decorated flagship in a 1930s-era downtown house-with four cozy dining rooms, each symbolizing a different French town and embellished by using lots of wood, tapestries, and soft lighting-is even now moving strong, owing partly to the food list which includes both equally classic French dishes such as coquilles Saint Jacques (scallops in a wine-enriched cream sauce) and many with updated twists, like grilled quail with figs and prosciutto. Entrée prices start in the mid-30s.
